Supreme Greek Salad

INGREDIENTS
  • 1 red onion
  • 1 tbsp dried oregano
  • 1 tsp black pepper
  • 1 tbsp red wine vinegar
  • ¾ cup extra virgin olive oil
  • 5 medium tomatoes
  • 1 tsp coconut sugar
  • 1 pinch of sea salt flakes
  • 1 very large romaine lettuce
  • ¾ cup pitted black olives
  • Juice of ½ lemon
  • 150gm Katharos feta cheese
METHOD
  • Peel and finely slice the red onion then sprinkle over the oregano and grind over some pepper
  • Pour in the vinegar and oil and toss well, leave it for a good 2 hours
  • Cut the tomatoes into chunks. Sprinkle the coconut sugar and a pinch of salt
    over them and leave while you get on with the rest
  • Wash the lettuce. Tear into big pieces and put into a large, wide salad bowl
  • Then add the olives, tomatoes, the red onion
  • Lastly add the Katharos feta cheese, crumbled into rough chunks
  • Toss gently, but thoroughly, so that everything is well combined
