Avocado Cheese Toast

  • 2 ripe avocados (cut and pitted)
  • 2 tbsp fresh lemon juice
  •  ¼ cup onion very finely chopped
  • 1 small tomato finely cut
  • 1 small chilly finely cut
  • ½ tsp sea salt
  • ½ cup chopped coriander
  • 50gm Katharos feta cheese
  • Scoop the avocados into a large bowl
  • Add lemon juice and mash coarsely with a fork
  • Mix rest of the ingredients
  • Cut some sliced sourdough bread and put scoops of the guacamole on it
  • Add some Katharos cheese crumbs on top
  • Serve it soon as the avocados tend to discolour and darken
