Cheesy Spinach Crepes (Cheelas)

INGREDIENTS
For the Pancakes:
  • 1 cup green moong dal (spit green gram)
  • 1 tsp salt
  • 1 small green chili
  • 2 cups Spinach puree
For the toppings:
  • 4 carrots, grated
  • 4 tomatoes, chopped finely
  • ½ cup grated coconut
  • ½ cup coriander, chopped
  • 1 tsp salt
  • 100gm Katharos Feta Cheese
For the Spinach Puree:
  • 2 ½ cup of chopped Spinach when blended gives 2 cups of Spinach puree
METHOD
  • Soak the Moong dal in water for 2 to 3 hours and then drain the water
  • Blend the soaked moong dal, slat and chili, transfer to a bowl
  • Add the Spinach puree to the mixture and stir well
  • Heat the griddle, and pour the batter on it. Spread it in a circular motion to make a thin circle
  • Cook till its light brown in color
  • Put the toppings on the Crepe and serve with Katharos Feta Cheese
