Potato Coins With Feta Cheese

  • 7 to 8 baby potatoes
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 75gm Katharos feta cheese
For the Guacamole:
  • 1 ripe avocado
  •  ¼ cup finely chopped tomatoes
  • 1/2 tsp lemon juice
  • Fresh finely chopped parsley or coriander
  • Pinch of salt
  • Green chilies (optional) 
  • Partly boil the potatoes for 10 minutes
  • Next, put them on a baking tray, crush them down with a fork, drizzle with some olive oil, salt & pepper
  • Roast the potatoes in the oven for 20 minutes at 200 degrees celsius
  • On the side, now make the guacamole from the avocados
  • Scoop out the avocado and with a fork mash it gently
  • Now add the chopped tomatoes, lemon juice, parsley, chillies & salt
  • Once the potatoes are out of the oven, place the guacamole on it with some chili sauce
  • Finally, crumble the Katharos feta cheese
