Ragi Cheese Dosa

  • Whole Ragi (finger millet) + Urad (whole black gram lentil) (3:1 ratio)
  • A pinch of asafoetida/hing
  • Salt to taste
  • Oil for coating vessel
  • 20gm Katharos feta cheese
  • Soak the lentils separately overnight after adding salt
  • Mix the lentils in a blender and keep it in a vessel on the kitchen counter with a
    loose lid
  • Once this mixture ferments, it will rise a little. Now, keep the mixture overnight
    in the fridge
  • Next day, bring it to room temp.
  • Heat the sauce pan and brush some oil
  • Pour a thin batter and let it cook on both sides till thin and crispy
  • Add some Katharos feta cheese and serve it with a spicy sauce
